Green Curry Fish Recipe

GREEN CURRY FISH RECIPE
Serves 2
2 thin fillets of cod
1 tablespoon salt free adobo seasoning
2 tablespoons butter; salted or unsalted
2 tablespoons of green curry paste; I use Thai Kitchen
1 tablespoon sofrito
1 - 13.66 ounce can coconut milk
FOR THE VISUAL LEARNERS
Season your fish with adobo seasoning. Set aside.
Over medium heat, in an 8-inch pan, sear the fillets of fish in butter for 2-3 minutes on each side, until the fillets are firm. Remove from the pan and set aside.
Add green curry paste to the pan and saute for 60 seconds. Add a half cup of water. Mix. Add sofrito. Mix. Add 1/4 cup of coconut milk. Mix. Add fish back to the coconut milk mixture. Turn the heat down to medium, and allow to simmer, covered, for 5-7 minutes.
Serve on top of funche.
Funche recipe is in the cookbook. And if you do decide to serve it with funche, reserve the 1/4 cup of coconut milk from the funche recipe, so it goes into the green curry fish recipe.
