What does a traditional Puerto Rican recipe and an annual festival in Puerto Rico have in common? The festival’s main attraction is setting an effigy on fire and a burial for a fish; its mourners are life-size, demonic-looking, medieval, folkloric characters. Both the festival and the recipe have been in existence for over 150 years and they both celebrate the death of a pilchard. There’s a recipe and a video at the end of this newsletter!
