SOFRITO RECIPE
Yields about 14 ounces
2 medium roma tomatoes, roughly chopped
1 medium yellow onion, roughly chopped
5 cloves garlic, roughly chopped
1 medium green bell pepper, roughly chopped
1 bunch cilantro, roughly chopped
5 leaves of culantro (recao), optional
Instructions: Place tomato in blender, blitz until smooth. Add onion and garlic and blitz until smooth. Add bell pepper and cilantro, blitz until smooth.
If you’re not going to use it immediately, pour mixture into a standard ice cube tray and freeze. It will keep frozen for up to six months.
By now you’re probably aware that I’ve pulled the plug on posting content on my Instagram feed. And it was time. Between the shadow-banning, creating content for the black hole, over zealous consumers and attempting to corral y’all over to YouTube for the last 8 months almost to no avail…it was time.
Unfortunately, that means I’m gonna have to step up the YouTube game. Unfortunately, I’m horrible when it comes to techie shit. I don’t have Adobe Premiere or Final Cut Pro, which wasn’t an issue when I was just uploading mukbangs into the system. Very little editing. But, the above video could have been just a simple record and upload ASMR. But, it took me FUCKING HOURS to produce and all because I wanted to add a background song that wasn’t in YouTube’s generic list of audio tracks to add. I don’t know why I got so hung up on it.
By getting so hung up on adding the fucking track, I used a converter via KapWing, which turned out great! Except the video quality is now absolute trash. Quelle Nightmare.
I’ve found myself in this position so many times throughout my life; MySpace and Wordpress.
Remember when you used to code your MySpace page to add unique backgrounds and music? You were like legit learning to code! </ablackitalicwhatthefuckamidoingupat4am?/>
Thankfully, class consciousness existed and everyone passed around the codes for what you were trying to accomplish. And it actually helped because long after MySpace became irrelevant, Wordpress showed its shitty little head and some of the codes could be used in their html mode. Fucking html mode.
There were many a night I sat at my desk and cried because I couldn’t get Wordpress to do what I needed it to do. Cried. And all because some asshole told me that a website was important for my career and made me look more professional. I found that absolutely no one ever asked me for a fucking website. Kids, you don’t need a website. If you don’t care about building a platform, that is the perfect opportunity to get by with an Instagram page dedicated to your work.
But, it’s back to the books for me. Now I need to find a way to add tracks to my video and all the while keeping the video it’s original iPhone 11 Pro quality.
Hola! If you use a Mac, have you tried iMovie? I think it comes with all Macs and it's pretty easy to import a movie and add a song as the soundtrack. Quality is preserved since you are going from iPhone to Mac. I've done that for a few iPhone videos that I posted on IG. Love the super chill song for the sofrito!
