This is bringing back childhood memories. Never went to Jacala's, but I've eaten at a lot of places like it all over Texas and New Mexico. I remember going to visit family in Texas every summer as a kid and wondering why the enchiladas or chile rellenos or flautas were similar yet different from what we ate in New Mexico. When I moved to the Midwest at 18 I barely recognized the Mexican food there. I will never stop loving how food changes as people move around, bring with them what they can and adapt as they have to or want to.

Never made enchiladas this way but it seems sooo much easier and less labor intensive than I have done it lol. I wish I could get good tortillas where I live but the ONE place that made them fresh went out of business. I definitely want to try this recipe out.

Right?! It was so much easier. Sometimes store bought tortillas are better NGL. There’s an entire panaderia empire in my hometown and they’re in-house tortillas suck. LOL!

This got me to thinking a bit about how we like to complain or argue that "that isn't the way" to make such&such "this is how" you make such&such while devouring said dish that we would supposedly make differently. Not bitching exactly just kind of shaking our head that , yea this is good, but my/our way is better. Know what I mean? I swear this was at every holiday and summer weekend get together with my extended family - NOBODY pussy-footed around saying whatever popped into their head in regards to the food - I like to think it didn't have a mean spirited undertone just sharing your two-cents that was never asked for in the first place but most certainly freely given. The family food critic version of leave a penny take a penny. If a dish was praised hoo hoo that was everything - if not that story would outlive you. lol
